Here's a great idea for quick summer breakfasts and snacks that you can put together once and enjoy over and over again. Smoothie packs can help you take advantage of all the fresh produce coming your way this time of year. The key to these smoothie packs is taking your favorite yogurt (plain greek for me) and filling ice cube trays with it. After the yogurt is thoroughly frozen, pop the cubes out and add them to a freezer-safe bag with two cups of fresh, washed fruit and freeze until ready to use. Make as many packs as you like and pull them out whenever you need them. The frozen fruit and yogurt will give your smoothie an incredible creamy texture without having to use any ice. It's delicious and easy!
Strawberry Banana Smoothie Packs
for freezer: 1 cup strawberries washed and chopped 1 large banana, peeled and chopped 5 or 6 frozen yogurt cubes 1 freezer-safe bag
for smoothie: 1/2 cup milk 3 tablespoons sugar 1 teaspoon vanilla
Directions Add fruit and yogurt cubes to a freezer-safe bag and freeze until use. For smoothies, combine entire bag of frozen fruit and yogurt in a blender with milk, sugar, and vanilla. Blend until smooth and serve immediately. Makes 2 large servings.
