Recipe: German Pancake
I love a breakfast that tastes like a dessert and the German Pancake does the job beautifully. I've never met anyone who doesn't love my German Pancake with fresh maple syrup, butter syrup, berries, or (my favorite) lemon curd. Give it a try and I'll bet you find that you've added a new favorite to your recipe book!
German Pancake
5 eggs
2/3 cup flour
2/3 cup skim milk
1 teaspoon salt
4 tablespoons butter
Directions
Preheat oven to 450 degrees. Cut butter into four individual pats and place in a 9x13 baking dish. Place the baking dish into the preheating oven to allow the butter to melt and the pan to warm. (This should take 4-5 minutes, or about as long as it takes to make the batter.)
Whip eggs with an electric mixer until they are light, frothy, and lemon-colored. Add flour, milk, and salt and mix until well combined. Pour batter into prepared baking dish and bake for 15-18 minutes, or until tall, fluffy peaks have formed around the edges of the pan. Makes 4-6 servings.
Serve warm with maple syrup, butter syrup, fresh berries and cream, lemon curd, or your favorite pancake topping.
