This is a fun cookie! It's a crispy, sweet, salty combination of some of my favorite snack foods—popcorn, peanuts, chocolate, and of course, cookies! If you're a fan of cookie dough, you'll especially like this recipe. I find that these cookies are especially popular with the guys. Maybe it's all that manly salt in the peanuts and popcorn. Maybe it's the efficiency of ingesting so many snack foods at once. No need to solve the mystery, just make a batch and find out for yourself how delicious they are (but keep yourself from gorging on the dough).
Popcorn & Peanut Cookies
1/2 cup softened butter 1 cup sugar 1 egg 1 teaspoon vanilla 1 1/3 cup flour 1/2 teaspoon baking soda 1/8 teaspoon salt 2 cups popped popcorn 1 cup semi-sweet chocolate chips 1/2 cup roughly chopped dry, roasted peanuts
Directions Preheat oven to 350 degrees. In a mixing bowl, cream butter and sugar together before adding in egg and vanilla. Whip until light and fluffy. In a separate bowl, combine flour, baking soda, and salt. Add flour mixture to butter mixture and mix thoroughly. Add in popcorn, peanuts, and chocolate chips, giving a quick turn to combine, but do not overmix. Place heaping tablespoons of dough on a prepared cookie sheet and bake for 12-14 minutes, or until barely golden brown.
HINT: Use your favorite kettle corn or caramel corn for a great alternative!
