Recipe: Leftover Turkey Quesadillas

MF Turkey Quesadilla If you're like me, you've got one last little ziploc bag of Thanksgiving turkey leftover in the fridge. And if your family is like mine, they can't handle the thought of one more plate of Thanksgiving leftovers. Here's a recipe that will use up the last of that turkey in a totally non-Thanksgiving, Tex-Mex kind of way with tasty turkey quesadillas. Everybody loves them and nobody thinks they're eating leftovers!

Tex Mex Turkey Quesadillas

2-3 cups roasted turkey, shredded 1 1/2 cups barbecue sauce 3 green onions, chopped 1 small can pineapple tidbits 2 cups grated sharp cheddar cheese 8 large flour tortillas 1 avocado, sliced sour cream

Directions Preheat a griddle or large flat pan to 350 degrees or medium-high heat. In a saucepan over medium-low heat, stir turkey and barbecue sauce together until well combined and warm. Place one tortilla on the griddle and spoon one fourth of the turkey onto it and spread evenly. Scatter green onions and pineapple tidbits over turkey, then top with a layer of cheese and another tortilla. Grill until bottom tortilla is crispy and golden brown and cheese is melting, then use a spatula to flip it over to cook the other side until done. Use a pizza cutter to slice into wedges. Serve with avocado slices and sour cream.

HINT: Got leftover mashed potatoes? Stir some chopped green onion into them, form them into tiny patties and grill them in butter alongside your quesadillas to make tasty potato pancakes!
