
Recipe: Bossy Banana Oatmeal Cookies
Preheat your oven now. Trust me, you won't want to waste any time with this recipe. These healthy cookies are moist, chewy, and have a great texture. Plus, this recipe uses only one tablespoon of butter. One!
I've named them Bossy Banana Oatmeal Cookies because even though there is more pumpkin than banana in the recipe, you can taste a rich banana flavor and no pumpkin at all. Pumpkin is a real chameleon in recipes; it takes on the other flavors beautifully. And bananas? Well, they are bossy and demand to be noticed! But enough about bananas and pumpkins, let's get baking!
Banana Oatmeal Cookies
1 1/2 cups flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
1 tablespoon butter
1 ripe banana
1 1/2 cup sugar
1 large egg
2 teaspoons vanilla
1 cup pumpkin puree
4 cups rolled oats
1 cup dark or semi-sweet chocolate chips
1 cup dried cranberries
Directions
Preheat oven to 350 degrees. In a medium mixing bowl, whisk flour, baking powder, baking soda, and salt until well comined. With an electric mixer, mix banana, butter, and sugar until creamy. Add egg, pumpkin and vanilla. Slowly add in the flour mixture. Next, on low speed, mix in the oats, chocolate chips, and dried cranberries.
Spoon rounded tablespoons of dough onto a prepared baking sheet. Do not flatten. Bake cookies for 12 minutes, or until golden brown on top.
