Avocado Smoothie

I have this theory that if you ever see something on a menu that sounds really strange, it probably tastes incredible. In fact, I almost always order the most unusual thing on the menu, and I'm rarely disappointed. Some of my most pleasant surprises have been things like a blue cheese tart, bacon ice cream, corn ice cream, and most recently, an avocado smoothie. A couple of month ago I visited a local cafe and saw Avocado Smoothies on the menu board and had to try it out. Guess how many times I've gone back for an Avocado Smoothie since then? Sorry, I can't reveal embarrassing information like that here. I have since tried to recreate the smoothie, and I think I've finally got it down so that I can share it with you. I hope you'll try it out--it's so smooth and creamy and a nice alternative to your regular berry smoothies. The hint of coconut and almond make it even more spectacular. Avocado Smoothie 2 cups ice cubes 1/2 large, ripe avocado 1 can coconut milk 1/2 cup sugar 1 cup plain yogurt 1/2 teaspoon almond extract Direction Blend all ingredients for 2-3 minutes in a blender and serve immediately. Makes 3-4 servings. Try it out and let me know what you think!
