5 Fun Uses for Cookie Dough

Oh, Cookie Dough. You're the soft, sweet treat that I steal with my fingers and lick from my beaters. You're the Before that's every bit as good as the After. Of course you like transforming into cookies, but you're strong enough to stand on your own. How do I love thee? Let me count the ways with these five delicious recipes. 1. Lovin' Spoonfuls. Scoop fresh cookie dough with plastic spoons and shape a nice, generous mound on each one. Sprinkle with colored ice cream sprinkles. Set spoons on a tray and freeze, covered, until ready to serve. Enjoy frozen or at room temperature. Makes a great party food or quick after school snack. 2. Cookie Dough Bon Bons. Shape cookie dough into one-inch balls and freeze for at least one hour, or until firm. On medium power, melt 2 cups semi-sweet chocolate chips in the microwave with 2 tablespoons vegetable oil. Microwave at 45-second intervals, stirring after each one until chocolate is smooth and glossy. Using a fork, immerse each cookie dough ball into the chocolate, then tap fork on the side of the bowl to allow excess chocolate to drain. Set bon bons on a parchment-lined cookie sheet. Freeze again 1-2 hours before serving. Serve frozen or at room temperature. 3. Cookie Dough Brownies. Prepare cookie dough and roll it out on a cookie sheet until you have a 1/2 inch thickness. Use a knife of pizza cutter to score it into 1/2 inch squares. Freeze at least 1 hour, or until firm. Prepare your favorite brownie mix and cover with foil before baking as directed. About 10-15 minutes before baking time is done, remove foil from brownies, and add chunks of frozen cookie dough to the top, pressing in gently with your fingers if needed to integrate. (Depending on the size of your brownie recipe, expect to use 1/3 - 1/2 of your cookie dough squares.) Bake the remaining 10-15 minutes. 4. Cookie Dough Mud Pie. Soften a half-gallon of your favorite ice cream on the countertop for 1-2 hours. Prepare cookie dough, and reserve 1 cup of dough. Press the cookie dough into the base of favorite prepared pie crust. Add more cookie dough if you want to line the sides as well. In a large mixing bowl, stir softened ice cream until smooth. Pour into pie crust and top with more cookie dough chunks. Freeze 8-10 hours, or overnight before serving. 5. Cookie Dough Milkshake. Prepare cookie dough and roll it out on a cookie sheet until you have a 1/2 inch thickness. Use a knife of pizza cutter to score it into 1/2 inch squares. Freeze at least 1 hour, or until firm. Prepare your milkshake using 2 cups ice cream, 1/3 cup milk, and 1/2 teaspoon vanilla. Mix on high in a blender, then add 1/2 cup frozen cookie dough chunks and mix on low speed for 10 seconds. Serve with a spoon. (Remember that because cookie dough contains raw eggs, it is not safe for pregnant women or those with compromised immune systems!)
