Recipe: Frozen Mini Mint Fudge Brownie Sandwiches

I’m warning you right now, these bite-sized ice cream treats are absolutely addictive. The chocolate wafers soften to perfection and each chocolatey, minty, brownie-filled bite will have you begging for another. It’s the perfect little treat after a summer barbecue. I recommend doubling or tripling the recipe and storing them in the freezer for impromptu desserts or afternoon snacks.
Frozen Mini Mint Fudge Brownie Sandwiches
1 cup BreyersÂ® BLASTS!â„¢ Mrs. FieldsÂ® Mint Fudge Brownie Frozen Dairy Dessert
16 small chocolate wafer cookies
Evenly scoop BreyersÂ® BLASTS!â„¢ Mrs. FieldsÂ® Mint Fudge Brownie Frozen Dairy Dessert onto 8 cookies, then top with remaining cookies, pressing down gently. Serve immediately or freeze until ready to serve.
HINT: Feel free to forego store-bought wafers and use your favorite homemade chocolate cookies instead.
HINT: Use a cookie dough scoop to scoop the ice cream and create uniform amounts inside each sandwich.
HINT: Wrap individual sandwiches in plastic if you plan to store them in the freezer for more than 24 hours.
