Recipe: Mint Chocolate Meltaways
Christmas Eve is approaching fast, and if you need a way to impress the Big Man during his stop at your house, this recipe will do it. These minty marvels practically melt in your mouth! If you decide to make these for Santa, I guarantee it will be a very good year for you. (Especially if you serve them with a cup of hot cocoa—perfection!)
Mint Chocolate Meltaways
1 cup butter, softened
1 package cream cheese (8 oz.), softened
2 cups sugar
2 eggs
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 package (or 1 pound) Andes mint chocolates
Directions
Preheat oven to 350 degrees. Chop mint chocolates into small pieces, reserving 1/3 of them for later. Mix flour, baking powder, and salt together in a separate bowl. In a large mixing bowl, cream butter and cream cheese together. Add sugar and whip until light and fluffy, then beat in the eggs. Slowly incorporate the flour mixture. Finally, mix in 2/3 of the mint chocolate pieces and then chill the dough for at least 30 minutes. Place rounded tablespoons of dough on a prepared cookie sheet and bake for 8-10 minutes, or until barely golden brown around the edges. Remove to a cooling rack. In a double boiler, over low heat, melt the remaining mint chocolates until smooth. Drizzle over cooled cookies.

What do u mean by prepared cookie sheet. Greased. Greased and floured. Or just have cookie sheet ready.

Prepared cookie sheet=greased with a nonstick spray or lined with parchment paper a silpat liner.
