Recipe: Halloween Pumpkin Cookies

MF Halloween Pumpkin CookiesInvite the kids to help you turn these soft, luscious pumpkin cookies into mini Jack ‘o’ Lanterns with well-placed chocolate chips for eyes, nose, and a toothy grin. They’re a delicious Halloween treat and a great activity to do together. I especially love the way the white chocolate chips look.

Keep the recipe on hand for the rest of the year, too, as it can be dressed up any way you like: with chocolate chips, pecans, raisins, cranberries, or even diced apples. Delicious!

Halloween Pumpkin Cookies

1/2 cup butter, softened
1/4 cup brown sugar, packed
1 1/4 cups sugar
2 eggs
1 1/2 teaspoons vanilla
1 can pumpkin
2 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
chocolate chips for decoration

Preheat oven to 350 degrees. In a large bowl, cream butter and sugars together with an electric mixer. Add eggs and vanilla and beat until smooth. Add pumpkin, cinnamon, nutmeg, salt, baking powder, and baking soda, mixing at medium speed for about one minute. Slowly add in flour until a thick batter forms.

Place rounded spoonfuls of dough onto a prepared cookie sheet. Smooth the top with a spoon or spatula, then place chocolate chips on top to form a face. Be sure to push the chocolate chips into the dough as they will pop out a little during baking.

Bake for 12 minutes, or until bottom edges are golden brown. Cool and serve.

Recipe: Peanut Butter Candy Cookies

MF PB Candy Cookies

Do you love peanut butter? Do you love peanut butter candies? Do you love chocolate chip cookies? Do you love crunchy, sweet, mouthwatering, flavor explosions? Do you want me to hurry and share this recipe before you die of anticipation?

If you said yes to at least one of the questions, you need to make these cookies right away. They are phenomenal hybrid of peanut butter and chocolate chip cookies, and everything about them screams Halloween and October to me–bright colorful Halloween colors, and an exaggerated use of candy. In short, it’s everything October should be! Give them a try.

Peanut Butter Candy Cookies

1 cup unsalted butter
1/4 cup dark brown sugar, packed
1 1/2 cup sugar
2 heaping tablespoons peanut butter
2 1/2 cup flour
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/2 teaspoons vanilla
2 tablespoons milk or cream
1 cup chocolate chips
1 1/2 pounds peanut butter candies (such as Reese’s Pieces)

Preheat oven to 375 degrees. In a small saucepan, melt butter on low heat. In a medium bowl, sift flour, baking soda, and salt together. Set aside. Combine sugars and melted butter in a large mixing bowl with an electric mixer until a thick paste forms. Add peanut butter and mix well. In a small bowl, beat eggs and then stir in vanilla and milk. Add egg mixture to sugar mixture and mix for about 60 seconds, or until well combined. Slowly add in flour mixture, followed by the chocolate chips.

Pour peanut butter candy in a separate bowl. Scoop and form generous balls of dough with your hands (the dough will be soft), and then roll each one in the candy. Place candy-coated dough balls on a prepared cookie sheet and bake for 10-12 minutes or until golden brown. Transfer cookies to a baking rack and allow to cool before serving.
