Recipe: Father's Day Breakfast in Bed

We had such a great response to our Mother’s Day Breakfast in Bed, we knew we had to pay tribute to dad with an equally impressive meal. Get the kids up early and work together to make this manly feast for dad: Grilled Breakfast Burrito, Tater Tots, and Grilled Pineapple. It’s full of rich, robust flavors that you can tailor to his exact tastes. Serve it up with a big glass of orange juice and Father’s Day will be off to a beautiful start! Fire up the grill or use your favorite grilling pan on the stovetop—either way, dad is in for a treat!

Grilled Breakfast Burritos

flour tortillas
scrambled eggs
sweet or hot italian sausage, cooked and crumbled
black beans
green bell pepper, diced
corn
tomatoes, diced
cheddar cheese
hot sauce (optional)
salsa and sour cream for garnish

Directions
In a nonstick frying pan, scramble eggs and season with salt and pepper. Remove from pan and set aside. Use the same pan to fry sausage completely. Remove sausage, leaving a small bit of grease in the pan. Sauté bell pepper and corn in the sausage grease until slightly browned. Remove from heat. Take a flour tortilla and assemble burrito with egg, sausage, bell pepper, corn, black beans, tomatoes, and cheese. Drizzle with hot sauce and fold ends in before rolling tight. Grill burrito on medium heat, fold side down, until golden brown (about 30 – 60 seconds). Turn over and crisp the other side before serving with salsa and sour cream.

Grilled Pineapple

1 fresh pineapple

Directions
Cut outer skin from pineapple, then core and slice it into long spears, roughly 1 – 2 inches thick. Grill for about 1 minute on each side, or until grill marks appear. Serve warm or cold.

Tater Tots

I love tater tots, but I find that most cooking directions on the package leave me wanting. I cook my tater tots at 450 degrees for about 20 – 22 minutes, stirring and turning about half way through. When they reach a golden brown color, I pull them out and turn on my broiler to 500 degrees. While the broiler is heating, shake salt or spices (Old Bay seasoning is my favorite) generously over your tots and then return them to the broiler for another 3 – 5 minutes, or until a beautiful brownish crust forms. For an extra treat, top with shredded cheddar cheese before broiling!
