Recipe: Citrus Watermelon Sorbet

As the dog days of summer approach, be ready with an ice cold remedy. This sweet sorbet is heaven sent when the temps start climbing, with just a hint of tart citrus to keep things interesting. You can substitute any melon you like, but I’m partial to watermelon. ¬†Enjoy this sorbet in a dish, or in a glass topped with your favorite fizzy. Either way, it will keep you cool all summer.

Citrus Watermelon Sorbet

6 cups cubed seedless watermelon
1/2 fresh lime plus zest
1/2 cup lemonade
3 mint leaves, minced (optional)
1 pinch of salt

Directions
Place watermelon cubes in a blender or food processor and blend until fine. Add lime juice, zest, lemonade, mint and salt and blend until well combined. Pour into a freezer-safe container and freeze overnight, or at least 8 hours. Before serving, allow to sit on the counter for 20-30 minutes to soften.

HINT: Taste test your sorbet before freezing and add 1-2 tablespoons of sugar if needed. This might be especially important if you’re using a different type of melon.
