I want to thank my amazing mom for all that she has done for me, and continues to do every day.

After my dad passed away very suddenly ten years ago my mom was crippled with an ungodly amount of medical debt resulting from the incident. Nearing her golden years when she should have been settling in to retirement, she had to go back to work to pay off all the debt, knowing that she’d have to work the rest of her life to pay it all off (all while dealing with the grief of losing her partner).

Two years ago, my husband and I finally became pregnant after years of trying when things suddenly took a terrible turn. It was a complicated pregnancy the entire way and we were told our little one (if she made it) could be mentally challenged, have heart defects, lung defects, possibly blind and/or deaf. We were at the mercy of fate, and I could only be comforted by the arms of the woman who had seen me through all of life’s challenges: my amazing mom.

Being a 2-income family by necessity, the idea of finding childcare for a special needs child became overwhelming, to say the least. It was an added stress that was weighing me down emotionally and financially… Then, my loving, thoughtful, never selfish mom came to me and declared that she had put in her notice at work and was going to stay home to be our “Granny Nanny!”

The day our daughter was born gave me new insight into the love my mom has felt for me all these years: undying, selfless and eternal. AND, knowing that our little one was going to be cared for by the most amazing person on earth gave us so much comfort that we were able to go back to work with peace of mind.

Here’s the happiest part of all: our daughter came out 100% healthy, and now she and Granny get to play and learn together all day long! They are the best of friends and I couldn’t be more thankful for the most amazing mom the world has to offer: mine!

What’s All The Screaming About?

It’s National Ice Cream month, that’s what! (Remember, I scream, you scream…) When temps hit their hottest, it’s time to cool down with rich, cold, creamy ice cream. Our delicious collaboration with Breyers is still going strong in the grocery freezer section: Chocolate Chunk Cookie Dough (my favorite) and Chocolate Fudge Brownie (my other favorite). Find a store that sells these great flavors in your area.

If you’re an ice cream fan, here are some fun ideas and recipes to celebrate and stay cool:

Recipe: Strawberry Banana Smoothie Packs

Mrs. Fields Secrets Smoothie Packs
Here’s a great idea for quick summer breakfasts and snacks that you can put together once and enjoy over and over again. Smoothie packs can help you take advantage of all the fresh produce coming your way this time of year. The key to these smoothie packs is taking your favorite yogurt (plain greek for me) and filling ice cube trays with it. After the yogurt is thoroughly frozen, pop the cubes out and add them to a freezer-safe bag with two cups of fresh, washed fruit and freeze until ready to use. Make as many packs as you like and pull them out whenever you need them. The frozen fruit and yogurt will give your smoothie an incredible creamy texture without having to use any ice. It’s delicious and easy!

Mrs. Fields Secrets Smoothie Packs

Strawberry Banana Smoothie Packs

for freezer:
1 cup strawberries washed and chopped
1 large banana, peeled and chopped
5 or 6 frozen yogurt cubes
1 freezer-safe bag

for smoothie:
1/2 cup milk
3 tablespoons sugar
1 teaspoon vanilla

Directions
Add fruit and yogurt cubes to a freezer-safe bag and freeze until use. For smoothies, combine entire bag of frozen fruit and yogurt in a blender with milk, sugar, and vanilla. Blend until smooth and serve immediately. Makes 2 large servings.

HINT: Use your favorite fruits and berries in your smoothie packs to create one-of-a-kind concoctions. Try using greens like spinach and kale for extra healthy options!

Recipe: Cinnamon Roll French Toast + A Limited Time Offer

Mrs. Fields Secrets Cinnamon Roll French Toast
If you’ve got a weakness for cinnamon rolls (as I do) and a love of French toast (as I do), then you’re going to go bananas for this recipe. It’s simple to put together, but oh so decadent. It bakes like a casserole and comes out puffy and light, part gooey cinnamon roll and part eggy, rich French toast. This is ideal for a weekend brunch. You can put it together the morning of, or prepare it the night before and allow the egg to really infuse into all the dough before baking. Serve it up with crushed pecans, raisins, and a drizzle of maple syrup, or straight out of the pan. You’re going to love this.

Cinnamon Roll French Toast Bake
adapted from Pillsbury

1/4 cup butter, melted
2 cans Pillsbury refrigerated cinnamon rolls with icing
6 eggs
1/2 heavy cream
2 teaspoons ground cinnamon
2 teaspoons vanilla
3/4 cup maple syrup
1/2 cup chopped pecans (optional)
1/2 cup raisins (optional)

Directions
Preheat oven to 375 degrees. Pour melted butter into a 9 x 13 baking dish. Remove cinnamon rolls from packaging and cut each roll into 8 wedges. Add wedges into buttered dish. In a medium mixing bowl, whisk eggs, cream, cinnamon, and vanilla together. Pour over cinnamon roll wedges. Drizzle syrup evenly over the entire mixture, then cover with foil. (At this point, you could refrigerate the dish overnight before baking.) Bake, covered, for 20 minutes, then remove foil and bake an additional 8-10 minutes until golden brown and puffy. Remove and immediately top with the icing, nuts, and raisins. Serves 12.

Back to School Budget Tips

It’s that time of year again! Break out your back-to-school shopping list, but avoid breaking the bank with a few smart tips:

Take inventory. You might have more supplies and clothing on-hand and leftover from previous years than you realize. Go through what you have before going shopping.

Make a list and stick to it. All the great back-to-school offers might tempt you to overbuy (and therefore overspend), so have a list to keep you on track and only spending money on what you need.

Get the better backpack. Nothing takes more of a beating during the school year than a backpack, and since all backpacks are on sale right now, choose a durable, high quality pack. Replacing a cheap backpack mid-year is expensive and frustrating.

Shop the ads. Pick up the Sunday newspaper and study the offers. You’ll find coupons for freebies, extra discounts, and the best dates to shop for the items you need. You might be surprised at where you’ll find the best deals.

Shop the back of the store first. When it comes to clothes shopping, always start in the back of the store on the clearance racks first. Take advantage of end-of-summer clearance sales on clothes that can transition into fall and winter.

Check online. For any supplies, but especially big ticket items like a new computer or a pair of designer jeans, check online to find the best price available. Some online retailers might have better prices, no taxes, extra offers, or free shipping. Just like your kids, it pays to do your homework!

Take time for a cookie. There are only so many years you’ll be back-to-school shopping, so don’t let the stress of the hustle and bustle keep you from enjoying the moment. Stop and smell the roses, or stop by for a cookie; whatever you do, savor the moment!

Recipe: Pumpkin Cookies with Caramel Frosting

MF Pumpkin Cookies

Pumpkin cookies are a cake-y, spicey, and a luscious tribute to everything great about autumn. I’ve never met someone who doesn’t like pumpkin cookies. (I hope I do someday. That will mean more pumpkin cookies for me!) This recipe is a classicwith a delicious twist—a thin layer of sweet caramel icing. The pumpkin, caramel, and spices come together for bite after bite of cookie joy, not to mention the occasional chocolate chip that pops up. Be careful with these, they may blow the top on your happiness ceiling. Make a batch today.

Pumpkin Cookies

1 cup butter, softened
1 cup brown sugar, packed
1 cup sugar
2 eggs
2 teaspoons vanilla
1 15-ounce can pumpkin pureé
3 cups flour
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1/2 teaspoon salt

Directions
Preheat oven to 350 degrees. In a large mixing bowl, mix butter until light and fluffy. Add sugars and mix until smooth and creamy. Add in eggs, followed by vanilla and pumpkin. In a separate bowl, combine the remaining dry ingredients and stir well. Slowly add the flour mixture into the pumpkin mixture until you have a light, fluffy batter. Finally, stir in the chocolate chips without over mixing. Drop rounded tablespoons on a prepared cookie sheet and bake for 12-14 minutes, or until the edge of cookies is golden brown. Remove to a cooling rack and ice with Caramel Frosting while barely warm.

Caramel Frosting

3 tablespoons butter
1/2 cup brown sugar (dark brown sugar will produce a richer caramel flavor)
1/4 cup heavy cream
1 teaspoon vanilla
2 cups powdered sugar

Directions
In a saucepan over medium heat, combine butter, cream, and brown sugar. Stir occasionally until mixture comes to a boil. Remove from heat and cool in the refrigerator. Once cooled, whip powdered sugar in 1/2 cup at a time until frosting reaches desired consistency. Frost onto still-warm pumpkin cookies.
