MF Snacks to Pack

Road trips, afternoons at the beach, and play dates in the park are all made better by a great snack. These portable snacks are some of my favorites: baby carrots, wasabi and soy sauce almonds, grapes with cheese, and my Gourmet Muddy Buddies (recipe below). This combo is a great mix of savory and sweet, indulgent and healthy. Plus, they all store well for the day (though you should keep them out of the sun). Try my recipe, pack them for your next day out, and snack in style all day long.

MF Muddy Buddies

Gourmet Muddy Buddies adapted from Betty Crocker

9 cups square corn cereal 1 cup semi-sweet chocolate chips 1/4 cup butter 1/3 cup peanut butter 1/3 cup Nutella chocolate hazelnut spread 1 teaspoon vanilla 1/2 cup shredded coconut 1 1/2 - 2 cups powdered sugar 1 lb. m&m candies

Directions Measure out cereal into an oversized mixing bowl and set aside. In a medium microwave safe bowl, heat chocolate chips, butter, peanut butter, and Nutella on high for one minute. Remove from microwave and stir to combine. Return to microwave for an additional 30 seconds on high. Remove and stir again until mixture is completely smooth. Stir in vanilla and coconut. Pour chocolate mixture over cereal and stir until cereal is thoroughly coated. Transfer mixture to a large, sealable bag. Add powdered sugar and seal top. Gently toss mixture together until the powdered sugar has coated everything evenly. Add more sugar if necessary. Add m&m candies, toss again gently and serve or store in an air-tight container.
