If you’re filling your couch on Sunday with friends and family, here are some simple recipes that will wow your crowd and keep you from spending all your time in the kitchen.
Sweet & Sour Meatballs: Fill your slow cooker with 3-5 pounds of frozen meatballs (pre-cooked), along with one large jar of grape jelly (32 ounces) and two jars of chili sauce (12 ounces each). Cook on the high setting for 3-4 hours, or until thoroughly hot before serving.
Fresh Guacamole: Dice 5-6 ripe avocados and add 1 tablespoon olive oil, 1 medium diced red onion, 2 tablespoons fresh lemon or lime juice, 1 teaspoon sugar, a handful of freshly chopped cilantro, and salt and pepper to taste. Mix together with a fork until combined, but still lumpy. Add 1 finely diced jalepeno pepper for some kick.
Cowboy Caviar: Combine 2 cans black beans (rinsed), 2 cans corn, 2 diced tomatoes, 1 diced red onion, 2 diced avocados, 1 handful chopped fresh cilantro for a colorful mix. Top with a fresh dressing (juice of 1 lime, 2 tablespoons honey, 2 tablespoons red wine vinegar, salt, and pepper) and serve with tortilla chips.
Mini Pizzas: Top store-bought flatbread with marinara sauce, your favorite pizza toppings, and lots of mozzarella cheese. Bake in a 450 degree oven for 10-12 minutes. Slice into wedges and serve.
Deviled Egg Dip: Puree 8 hard-boiled eggs with 1/4 cup mayonnaise, 1 tablespoon mustard, 1 chopped pickle, a dash of hot sauce, and paprika, salt and pepper to taste. Garnish with chives and serve with a thinly sliced baguette.
