Recipe: No-Bake Rocky Road Cookies

Take a poll of 100 people and they'll tell you that the best part of school lunch, hands down, were those no-bake chocolate oatmeal cookies. There were various unmentionable nicknames for them but, oh, were they good! I was reminded of those cookies and decided to give them a new spin, Rocky Road-style. And the result? Well, they still aren't a very attractive cookie, but what they lack in looks is made up in major flavor. One bite and you'll be flooded with those wonderful school-day memories.

You're dying to try them now, aren't you? I think you should. No-Bake Rocky Road Cookies 2 cups sugar 1/2 cup (one stick) butter 4 tablespoons cocoa 1/2 cup milk 1 cup peanut butter 1 tablespoon vanilla 3 cups oatmeal 1 1/2 cups mini marshmallows 1 cup chopped cashews 1 cup chocolate chips Directions In a heavy saucepan, bring the sugar, butter, cocoa, and milk to a boil. Allow it to boil for one minute, then add peanut butter and vanilla and stir until combined. Remove from heat. Stir in the oatmeal, marshmallows, nuts, and chocolate chips. With an ice cream scoop, form balls of dough and set on wax or parchment paper until cool. Enjoy!
